Chicken Enchilada Casserole

1/2 cup onions

1/4 cup pablano peppers

1/4 cup cubanelle peppers

1/4 cup mixed bell peppers

fry in peanut oil till caramelized add

1 lb chicken breast cut into slices about 2×1/4″

salt pepper basil garlic and

1/4 cup fresh cilantro or frozen or tbs powdered

fry 10 min medium heat

In medium sauce pan make 1 pkg alfredo sauce mix to directions

while frying 1″ strips of 10 small corn tortillas till brown at medium heat

set aside to top casserol

put chicken mix into brownie pan

cover with tortillias

drizzle 1 can of mild red enchilada sauce over

shred 8 oz colby cheese over top

Bake in preheated oven at 350 15 min
